Creamy Cheezie Zucchini

My sister came over the other day and taught me how to make vegan bechamel sauce. Since then I’ve been eating a little bit too much of it, but nevertheless! This recipe will help you put down the dairy and pick up the soy!

While boiling the pasta, heat another pan on low heat and pour a cup of soy milk and a spoon of dairy-free butter (I like to use Nuttelex Original. You can buy this in Landers & SNR)

Stir till the butter has melted and slowly pour in some flour while stirring. It’s important to keep stirring or whisking so that the flour doesn’t clump! Add about half a cup of flour. If you want a thicker sauce add even more flour, and if you want it to be soupy, add less. Play with it!

When you find the right consistency for you, add chopped onions and garlic and continue to stir. Throw in the sliced zucchini and let simmer.

I like to add nutritional yeast to give it a cheezier flavor. Add about two tablespoons. If your sauce has become too thick for your liking, add a dash more soy milk and continue to stir.

You’re nearly done!

Drain your pasta, mix it in with the sauce and add salt and pepper to taste.

There it is! I hope you enjoy it as much as I do ūü•í

If you haven’t been, take some time away from General Luna and head up to the Magpupungko rock pools. Its amazing there! Make sure to check the tides so you know when its the best time to go.

After an afternoon there, we found this little guy… so we took him home! Name: Pungko ‚ô•ÔłŹ

My boyfriend’s family have a beautiful place in Pilar, a town located in the middle of Siargao Island. Quiet and right on the water, this is a destination fit for friends and family. Rooms will be available for rent very soon! This is the view from the deck.

After basking in the sun and enjoying the quiet, we went to Lotus Shores in General Luna. If you’re ever in Siargao, you have to try out this restaurant. They are well known for their delicious vegan menu ūüĆĪūüĎĆūüŹľ¬† and everything was superb.

For those of you living under a rock, Wonderfruit is ready for their next, magical event this coming December 14-17th, 2017!!! Ticket prices go up on the 5th September so make sure you don’t miss out on their pre-selling tickets! I realize that I haven’t been very active but this I need to share…

This February, 2017 was my first experience with Wonderfruit and I can tell you this, it was spectacular… and just so you get the feel of what I experienced, here are videos of our daily diary at Wonderfruit by the amazing, Sebastien Gilbert from Maldavar Films

As you can see, Wonderfruit is full of color and surprises. There are so many activities available such as, pottery, paper mache, yoga, meditation, dance, talks, and so much more! And even though you will be in the middle of a beautiful nowhere, the atmosphere will always be vibrant and full of life ♡

The glamping tents were awesome! There were 2 queen sized airbeds, a lamp, a mirror, an aircon/fan (depending on which tent you choose), and a safety box. Only people staying at the glamp site were granted permission to enter and the bathrooms and showers were totally clean. Use the showers before 9am to skip long lines!

Dancing and chilling on everyone’s favorite stage, The Solar Stage. This superb stage was designed and created by¬†Gregg Fleishman, whose creations are regular highlights at the Burning Man festivals. Below is a photos taken by Sebastien Gilbert of the stage lit up at night. Amazing, isn’t it!?

The festival is spread out onto the vast fields of Siam Country Club in Pattaya, Thailand, only a couple of hours from Bangkok.

There, I will be staying in a Bell Tent fully equipped with everything I’ll be needing for the 4 day event! There is also a large area for camping or parking RVs¬†throughout the¬†4 day festival. Water is even free, just bring your own bottle! Everything you need will be there..

There will be educational seminars¬†and workshops from inspiring and intellectual¬†people from all over the world who want to share their innovative ideas. One seminar I wont be missing is by Paula Miquelis, “How to Turn Garbage Into Gold”, and I will definitely be taking part in the farming workshops! I can’t wait!

 Thank you to my friends and family for helping me create this consciously aware fashion line! It has been a journey!

¬†SOLTI became an ethical line naturally; honestly, I wasn’t aware with what I was doing, I was just being me in the process. I like to find ways in which I can help others¬†and the environment, and collecting “waste” fabrics just happened to be part of the¬†creation.¬†I found joy in knowing that every piece of “waste” fabric could be turned into something useful and beautiful for someone else, and that it would make even a¬†small difference in the environmental impact.

 I learnt that in China, 26 million tonnes of textile is waste annually! The environmental impact there must be colossal! After visiting landfills here in Cebu, I could just imagine how great our impact to global warming is, and thats when it hit me, I could help make a difference.

Vegan Veggie Noodles

Vegan Veggie Noodles

Simple and light, perfect for dinner.

РBoil 1 teaspoon of sesame oil with 3 cups of vegetable broth (I used one from Healthy Options)

– Add 1 onion, 3 cloves of garlic, 1/3 a large carrot, and a handful of broccoli

– If you’d like, add soy meat/tofu to the mixture and let cook

РAfter 3 minutes, add the noodles of your choice (I used a mixture of rice & glass noodles) and cook for another 2 minutes

– Add a tablespoon of liquid aminos or vegan soy sauce and 1 teaspoon of chilli flakes

– Squeeze in some lemon and it’s¬†ready for you to¬†eat!
