Creamy Cheezie Zucchini

My sister came over the other day and taught me how to make vegan bechamel sauce. Since then I’ve been eating a little bit too much of it, but nevertheless! This recipe will help you put down the dairy and pick up the soy!

While boiling the pasta, heat another pan on low heat and pour a cup of soy milk and a spoon of dairy-free butter (I like to use Nuttelex Original. You can buy this in Landers & SNR)

Stir till the butter has melted and slowly pour in some flour while stirring. It’s important to keep stirring or whisking so that the flour doesn’t clump! Add about half a cup of flour. If you want a thicker sauce add even more flour, and if you want it to be soupy, add less. Play with it!

When you find the right consistency for you, add chopped onions and garlic and continue to stir. Throw in the sliced zucchini and let simmer.

I like to add nutritional yeast to give it a cheezier flavor. Add about two tablespoons. If your sauce has become too thick for your liking, add a dash more soy milk and continue to stir.

You’re nearly done!

Drain your pasta, mix it in with the sauce and add salt and pepper to taste.

My 2017 Euro Trip ‚Äď Mia & Jacque’s Wedding in Roscoff

Mike and I traveled from Paris to Roscoff on a train the next morning. It was about a 5 hour trip and was actually quite pleasant and simple to do. On that evening, the welcome garden party of Mia & Jacques was held. The event was at Jacques family home in Roscoff, and it was sublimely beautiful.

 

This wedding weekend definitely brought the most Filipinos Roscoff had ever seen, hahaha. It was great to be with friends on that side of the world, and meeting Jacques’s family was a delight. Mia and Jacques had a great crowd; from their childhood pals to their college friends, everyone was wonderful.

The ceremony was held in the Church of Our Lady of Croaz Batz, from the 16th century. It was quaint, charming and very elegant, perfect for Mia and Jacques.

Our mandatory couple photo before the night got started. Im wearing a pastel pink Mango jumpsuit, (which by the way, I saw someone wearing at the welcome party the night before! Oh, well. Great minds think alike!) and sandals that I fell in love with in a boutique store in Roscoff. No heels, no problems!

My hangover the next day wasn’t so bad, thank goodness! The wedding party met at the pier and off we went to¬†√éle de Batz.

Île de Batz is a small island just a few minutes away from Roscoff known for their scenic views, pristine beaches, affluent flowers, and beautiful gardens. I only saw two cars on the island and a few tractors. The roads were quiet and wherever you looked there were flowers. The smell of lavender filled the air and all you could hear was the sound of the wind brushing through the leaves. I fell in love with this island instantly.

For those of you who love crepes, make sure you walk to the restaurant, Creperie du Phare. It is about a 20 minute walk from the pier and is a great place to sight-see.

What a wonderful trip and a great experience. Thank you Mia and Jacques, for having us there! It was a truly beautiful wedding and I wish you both all the love and happiness in the world! Next stop —> Plymouth, England via Brittany Ferries. 6 hour travel time…

I thought, why change my content and not the title? So, after a long and thoughtful process, I decided on the solti soul.

I enjoy¬†my lifestyle and I breathe my creation – SOLTI Activewear. For those of you who don’t know, SOLTI is a conscious brand that is dedicated to¬†helping the environment by recovering and using waste fabrics to create locally handmade fashion for the active lifestyle.¬†It’s not just about living a cruelty-free life, it’s about making myself and the world I live in a better place.

I know that we are on this planet with deeper and spiritual reasons which I can’t even explain, but we are here breathing, walking, eating, and living on this planet like we own it, as well as all¬†the other creatures we’re supposed to share this planet with. This is what I hope to change. Life is about¬†sharing, giving¬†love, and caring for those in need, and for those who cannot speak for themselves.
