My quick, go-to meal. I am obsessed with noodles…
Prepare your udon noodles by cooking them in a pot of boiling water for 3 to 4 minutes and then putting them into a colander
Chop up garlic, green beans, tofu, and spring onion
Heat up a saucepan, pour some sesame oil and add the garlic
After 1 minute, pour in some soy sauce, sweet rice wine, sriracha
and a dash of maple syrup to taste
Add the string beans and cook for approximately 4 minutes while stirring
Add the tofu and a pinch of salt
Mix the udon into the saucepan and stir
Pour the noodles into a bowl, add the spring onions and throw in sesame seeds
Green beans are high in fiber, great with preventing blood clots in arteries and veins, controls diabetes, is great for bone health, eye care, and also boosts your immunity! Tofu is high in protein, magnesium, iron, calcium, zinc, and vitamin B1. ♡ Plant based, baby!
When I was 19 years old, my father underwent Laparoscopic hernia repair surgery for his 4th hernia. I was living in San Francisco at the time, and when he called me to tell me about his surgery, he told me that his surgeon showed him a video of the entire operation… What my father saw changed his life. Under the layers of his skin, around his muscles and tissues, there was a thick white/yellowish layer. He asked his surgeon what it was and when he was told that the thick layer was excess fat, he was stunned as well as disgusted. His surgeon spoke to him about the risks of obesity and how it can harmfully effect his everyday life, and told him that if he didn’t change his diet asap, his health would go downhill from there. He showed my father a documentary to further explain not just the consequences eating meat has on your body, but also the effects it has on animals, nature, and global warming.
Food Inc. was the documentary that changed the diets of both my father and I. It is a documentary I highly recommend to help introduce you to the meat industry. It really opened my eyes and it taught me so many things about food I have never even thought about questioning. After watching Food Inc., I was never able to put another animal dish into my mouth, till this day and hopefully for the rest of my life. My father rarely eats meat, and though he still eats cheese, he has been a health freak since that day. He just turned 80 years old, and I can’t believe how active and healthy is! I am so thankful for his doctor and for showing us such a great documentary.
I’m not here to convert people’s diets, I’m here to share facts about what eating animals can do to us and to to Mother Nature; things I wish I was taught when I was a child. I hope to be your guidance in making wiser decisions with the food you eat. ❤
