Metro Society’s SUMMER SOUL at AZURE

 The day of the Summer Soul event had arrived! Not only were we there to celebrate Metro Channel, but we also came together to support Crimson’s campaign, ‘Adopt a Clam’ to help keep our oceans protected.  I was very excited to see what was in store for the evening.

With an all white dress code, I had prepared myself by designing and creating outfits for myself, my sister and two of my girlfriends. It was my first time making outfits for an event so I was very excited to see everyone in their SOLTI custom designs!

At about 3pm, Krishtal and I headed to Crimson so we could start getting dolled up. Here is a video of us using the awesome KISS Instawave hair curler for the first time. To be honest, it took a few minutes to get used to, plus I just had my hair cut shorter! BUT, it definitely worked and it makes curling your hair so much easier :]

After an hour of hair and make up, it was time to shine. My ladies rocked my SOLTI custom designs, the weather was perfect, and the set up at Azure was stunning. We couldn’t have asked for more!

The garden was flowing with lovely people in white, refreshing cocktails and delicious hors d’oeuvres. We mingled with our fellow Cebuanos and then headed to the benefit dinner on the beach.

Everything looked enchanting with blue lights, decor and floral centre pieces. There was a buffet with a delicious variety of cuisines, and even though I joined in on the feast, Azure still spoiled me with my very own vegan plate!

The evening was full of food, wine and great company, but what topped it off for me were the number of adopted clams! My friends and I even adopted one :] The campaign was definitely a success and marine life advocates were more than pleased. Thank you, Crimson for helping protect our clams! Readers, its time to adopt yours, too!

The 8-hectare marine reserve hosts 98 juvenile Tridacna or Giant Clams, first introduced in 2nd December 2016 in the reserve to allow a safe and conducive area to grow and develop. Because the protected area has a strict no-take implementation, continues monitoring by a marine biologist and various other protective measures, these Tridacna have found a good habitat in the resort’s foreshore.

The first of its kind in Cebu, Crimson Resort & Spa Mactan is putting up for adoption the 98 Tridacna or Giant Clams for a year. By adopting one of these clams, you will be contributing to its protection and growth.

In June, a scheduled tagging activity will be conducted to fully monitor the growth, movement and development of these clams.

The night ended with summer beats and more mingling. Everything was truly perfect. Thank you Metro and Crimson for delightful event!

Creamy Cheezie Zucchini

My sister came over the other day and taught me how to make vegan bechamel sauce. Since then I’ve been eating a little bit too much of it, but nevertheless! This recipe will help you put down the dairy and pick up the soy!

While boiling the pasta, heat another pan on low heat and pour a cup of soy milk and a spoon of dairy-free butter (I like to use Nuttelex Original. You can buy this in Landers & SNR)

Stir till the butter has melted and slowly pour in some flour while stirring. It’s important to keep stirring or whisking so that the flour doesn’t clump! Add about half a cup of flour. If you want a thicker sauce add even more flour, and if you want it to be soupy, add less. Play with it!

When you find the right consistency for you, add chopped onions and garlic and continue to stir. Throw in the sliced zucchini and let simmer.

I like to add nutritional yeast to give it a cheezier flavor. Add about two tablespoons. If your sauce has become too thick for your liking, add a dash more soy milk and continue to stir.

You’re nearly done!

Drain your pasta, mix it in with the sauce and add salt and pepper to taste.

There it is! I hope you enjoy it as much as I do 🥒

Mike and I traveled from Paris to Roscoff on a train the next morning. It was about a 5 hour trip and was actually quite pleasant and simple to do. On that evening, the welcome garden party of Mia & Jacques was held. The event was at Jacques family home in Roscoff, and it was sublimely beautiful.

 

This wedding weekend definitely brought the most Filipinos Roscoff had ever seen, hahaha. It was great to be with friends on that side of the world, and meeting Jacques’s family was a delight. Mia and Jacques had a great crowd; from their childhood pals to their college friends, everyone was wonderful.

The ceremony was held in the Church of Our Lady of Croaz Batz, from the 16th century. It was quaint, charming and very elegant, perfect for Mia and Jacques.

My hangover the next day wasn’t so bad, thank goodness! The wedding party met at the pier and off we went to Île de Batz.

Île de Batz is a small island just a few minutes away from Roscoff known for their scenic views, pristine beaches, affluent flowers, and beautiful gardens. I only saw two cars on the island and a few tractors. The roads were quiet and wherever you looked there were flowers. The smell of lavender filled the air and all you could hear was the sound of the wind brushing through the leaves. I fell in love with this island instantly.

For those of you who love crepes, make sure you walk to the restaurant, Creperie du Phare. It is about a 20 minute walk from the pier and is a great place to sight-see.

What a wonderful trip and a great experience. Thank you Mia and Jacques, for having us there! It was a truly beautiful wedding and I wish you both all the love and happiness in the world! Next stop —> Plymouth, England via Brittany Ferries. 6 hour travel time…

Touchdown and fresh off the boat straight to the Louvre 🙌🏼 It was a perfect summer’s day.

At the Notre Dame.

You can’t guess where we went to next… one of the first vegan restaurants in Paris, Le Grenier De Notre Dame 😻🌱 The dishes were not only colorful, they were very tasty and flavorful, and of course, nutritious!

And then of course some sorbet for the lady. Don’t be fooled, it was delicious.

To Musée Picasso!

Beautiful work and beautiful quotes by Picasso himself cover the rooms in Hôtel Salé. What a great museum to visit.


Palace of Versailles

The gardens were amazing! There’s a lot to see so make sure you wear comfortable shoes!

So much history on these walls. Truly a magnificent palace, full of intricate gold details. Being surrounded by such beauty and history really makes you recognize the evolution of design and appreciate where it came from.

After a lot more walking, we reached Sacré-Cœur, an 18th century basilica on the top of Montmartre, Paris.

Just look at this Romano – Byzantine architecture. It’s incredible.

I could spend hours, even a day or two at some of Paris’s famous sites, but unfortunately we didn’t have much time left to spend. Our last night in Paris…

Yes, we returned to Le Grenier De Notre Dame for our last supper 🤗 🌱

Then I took Mike to see the famous Avant-Garde cabaret show in Paris…. Crazy Horse! It was so much fun and very very creative show. The performances were colorful, edgy, sexy and very elegant. I highly recommend it!

If you haven’t been, take some time away from General Luna and head up to the Magpupungko rock pools. Its amazing there! Make sure to check the tides so you know when its the best time to go.

After an afternoon there, we found this little guy… so we took him home! Name: Pungko ♥️

My boyfriend’s family have a beautiful place in Pilar, a town located in the middle of Siargao Island. Quiet and right on the water, this is a destination fit for friends and family. Rooms will be available for rent very soon! This is the view from the deck.

After basking in the sun and enjoying the quiet, we went to Lotus Shores in General Luna. If you’re ever in Siargao, you have to try out this restaurant. They are well known for their delicious vegan menu 🌱👌🏼  and everything was superb.

Stir Fry Miso Udon

Stir Fry Miso Udon

My quick, go-to meal. I am obsessed with noodles…

Prepare your udon noodles by cooking them in a pot of boiling water for 3 to 4 minutes and then putting them into a colander

Chop up garlic, green beans, tofu, and spring onion

Heat up a saucepan, pour some sesame oil and add the garlic

After 1 minute, pour in some soy sauce, sweet rice wine, sriracha
and a dash of maple syrup to taste

Add the string beans and cook for approximately 4 minutes while stirring

Add the tofu and a pinch of salt

Mix the udon into the saucepan and stir

Pour the noodles into a bowl, add the spring onions and throw in sesame seeds
